It’s National Strawberry Day. Finding strawberries that don’t ruin before I get them from the grocery store has been a challenge lately. It’s also really hard to find strawberries that are actually sweet and I do not like the whole soaking them in sugar for shortcake trick. So when I find the pretty berries are really tart I use them in salads. And it’s so easy to do.
Recipe (if you can call it that)
- Big bag of Baby Spinach
- Bag of Shredded carrots
- A bunch of grape tomatoes
- Sliced strawberries
You can also add pecans, blueberries, and even fresh pineapple. Just toss it all in a bowl and enjoy.
My other main use for strawberries are “snack packs” for my daughter. I love the Sistema click plastic-wear. I have the small ones with two sections. One side I put sliced strawberries and on the other she gets pretzel fish and either a Laughing Cow or Babybell cheese. They go great in a lunch box or for afternoon snacks.
